Rabri
Rabri is popular milk made sweet which hails from North India and is a popular dessert liked by every sweet lover. It is a thickened sweet delicious dessert that has layers of cream in it. Its preparation is easy but time-consuming and requires a lot of patience and attention. Don’t go absent-minded while making Rabri!
Ingredients:
5 cups of full-fat milk
1 cup sugar
5-6 green cardamom pods
10-12 saffron strands
1 teaspoon rose water or kewra water
¼ cup of blanched and sliced almonds
¼ cup of blanched and sliced pistachios
Method:
Step 1: Take 5 cups of full-fat milk and pour it into a heavy bottom pan or kadhai.
Step 2: Once the milk starts boiling, a thin layer of cream will start settling on top of it. Set it aside with the help of a spatula.
Step 3: While the milk is being thickened, soak a handful of almonds and pistachios in hot for 30 minutes.
Step 4: Once the milk has been reduced to half, add 1 cup of sugar (you can add as per your taste) and stir.
Step 5: Now add 10-12 saffron strands and ½ teaspoon of cardamom powder. Adding saffron to the milk changes its colour.
Step 6: Stir the rabri gently and add the slivered almonds and pistachios to it.
Step 7: Let it cool and serve warm or chilled.
