When we talk about sweets, the first State which comes to our mind is West Bengal.

Janmashtami is incomplete without dahi handi! So, let us check out the recipe of mishti doi and get ourselves prepared to celebrate the birthday of maakhanchor Krishna.

Ingredients:

4 cups of full-fat milk
¾ cups of finely chopped jaggery
½ teaspoon of cardamom powder
2 tablespoons of yoghurt

Method:

Step 1: Add 1 litre of milk in a heavy bottom pan or a kadhai and keep the flame between low to medium.

Step 2: Stir occasionally and let the milk come to a boil.

Step 3: Simmer the milk on a low-medium flame and stir constantly.

Step 4: Keep stirring until it reduces to ½ of its quantity.

Step 5: Turn off the flame and let it cool.

Step 6: Add the chopped jaggery to the milk when it is simmer and stir until dissolved.

Step 7: Add ½ teaspoon of cardamom powder and mix well and let the milk warm.

Step 8: Check the temperature of the milk. If it does not hurt your finger after dipping into it then add two teaspoons of yoghurt.

Step 9: Now pour the milk into an earthen pot and cover it with aluminium foil.

Make sure that you keep the doi in a warm place for at least 24 hours. It takes more time than normal curd to settle. Once it sets, refrigerate it and serve chilled.
